From the many coffee varieties available around the world, we carefully select only those that we believe are suitable for Takagi Coffee.We roast our coffee in-house every day, including rare varieties that are rarely available.The time that has passed since roasting coffee beans is crucial.We let the beans sit until they reach their most delicious state, then grind them and brew the coffee upon order.Enjoy a cup of coffee and relax surrounded by the pleasant aroma.

How coffee beans are made

-

Pure white flowers bloom on the coffee trees and the entire farm is filled with a jasmine-like scent. As the season progresses, the flowers fall and green fruits appear, which eventually ripen to a red color.The ripe fruits are picked, the flesh removed and dried.Of course, the processing procedures vary depending on the region and farm, but once the beans are dried until the moisture content is around 10%, they are threshed and become green beans.The beans are graded based on the size of the raw beans, the altitude of the growing region, and the percentage of defective beans, and the good beans are then further selected and shipped all over the world.

<Natural (non-washed) selection method>

[Harvest → Dry the coffee cherries → Store them in a warehouse → Thresher → Green beans] This is a traditional method used in Brazil, Ethiopia, Yemen, Indonesia (canephora species), etc.After rough sorting, the coffee cherries are dried and the pulp and parchment are removed all at once.This develops a unique flavour and brings out the natural taste of the beans.

<Washed (water-washed) selection method>

[Harvest → Place in a water tank to remove light foreign matter → Remove husk and pulp using a pulp remover → Remove mucilage (the slime between the pulp and seeds) in a fermentation tank or similar → Wash with water → Age in a dry storage facility → Shell → Green beans]This method is widely used in Central and South America, the Caribbean, Asia, and Africa, in other words, all over the world.The pulp and parchment are removed separately.It has a clean, clear flavor and has the advantage of keeping the coffee quality relatively consistent.

<Pulped Natural Selection Method>

[Harvest → Place in a water tank to remove light foreign matter → Remove husk and pulp with a pulp remover → Dry while leaving the mucilage (the slime between the pulp and the seeds) → Leave to sit in a storage facility → Sheller → Green beans] Pulped Natural, developed in Brazil, is a method of drying parchment coffee that retains the mucilage after the pulp is removed.It has a relatively consistent quality while retaining natural flavor characteristics.

<Sumatran Selection Method>

[Harvest → Place in a water tank to remove light foreign matter → Remove the husk with a pulp remover → Dry while leaving the mucilage (the slime between the pulp and the seeds) → Store in a cellar → Threshing → Final drying → Green beans] This method is practiced in parts of the Indonesian island of Sumatra, in which parchment coffee with remaining mucilage is dehulled without being thoroughly dried, and then further dried.The green beans have a unique deep green colour that is different from other refining methods, and the flavour is also unique.

[Roasting of green beans]

This is the process of adding calories (heat and pressure) to raw beans.Roasting creates chemical changes that bring out the unique bitter and sour flavors of coffee beans.Additionally, varying the roasting time, calorie addition, heat, and pressure can affect the flavor of the finished coffee beans.A major feature of the roasting process is that it is extremely difficult to reproduce the exact same taste.
